There’s just something about a taco board that instantly makes dinner feel more fun. Whether you’re celebrating Cinco de Mayo, hosting friends, or simply trying to make an ordinary Taco Tuesday feel a little more special, this is such an easy meal to throw together.
I love taco boards because they’re colorful, customizable, and low stress. Everyone gets to build their tacos exactly how they like them, which always makes dinner feel a little more interactive and festive.
For this board, I filled a tray with crispy mini tacos (the Trader Joe’s ones are my favorite), guacamole, pico de gallo, black beans, corn salsa, shredded lettuce, pickled onions, fresh jalapeños, radishes, shredded cheese, sour cream, lime wedges, and olives. Add a few colorful sodas or margaritas, and suddenly dinner feels like a fiesta.
Honestly, you can make it as simple or extra as you want. Some nights I keep it basic with just a few toppings, and other times I lean fully into the fiesta vibe with lots of colorful add-ons.
